It’s not an adhesion to the bed issue, but this is the third time at some point in the middle of the print it’s stopped attaching

Try using something other than gyroid infill, that can sometimes cause problems. Other than that it could be a print temp issue, could be the spool getting caught like you said, an extruder gear tension issue, or some combination of those.
If you are using PrusaSlicer, you can save the print settings and upload it here for people to take a look at.
I have no idea. This is my 2 cents. Turn z hop retraction on. It is a setting in Cura. I assume Prusaslicer has something similar. It takes a tiny bit longer, but decreases failure rate.
The setting tells the nozzle to move slightly up above the work so the nozzle doesn’t potentially scrape your work while jogging to the next position.
