Whats y’alls preferred/go-to wood finish?
Does shellac replace an oil finish? Or can it be used to seal an oil finish? I’m trying to stay away from PU if possible

I’m a big fan of Danish. Building it up over the course of a couple of weeks takes a minute, though. You said you’re trying to stay away from poly; have you tried General Finishes water-based poly? My experience with it has been great, from rolling it on to spraying.
Osmo and Rubio seem to be the go-to for a lot of the fine furniture makers I follow, but I don’t have any experience with it personally.
I use Walrus Oil, Osmo and Rubio. A lamb’s wool buffer is a must.
Wait, @LivingOnTheEdgeKupec, do you really mean walrus oil or is that my new favorite typo of the week?
Is that an oil base, and osmo/rubio on top? Or just what you use on different projects?
I use them, individually, on different projects.
E.g. this desk is finished with a tinted Rubio oil.

I’ve used Danish oil on my last few furniture projects and been pretty happy with it.
